Question
re: dovor shenisalim min hoayin...I have had my non-Jew clean an entire summers worth of chickens in my home and have placed these raw in a freezer for periodic use.
as this took place over a number of days, there were times that I had to run out of the house for a few minutes with the help not knowing I was gone nor when I would return. Is this a problem?

The chicken can be eaten. According to the Rema (שו"ע יור"ד ס"ג: ב ) after the fact, even if you had just found the chickens where they were , meaning that they were untouched , that would suffice. Your presence in the home and the ability to go in and out to see that things are done properly and the fact that it was not known that you were away, making your sudden appearance more possible makes the situation even better, because of the element of "yotze venichnas" so we assume that that nothing was touched.(שו"ע יור"ד קכט:א, קיח:י )
If by a "summer's worth" of chickens you are referring to some commercial quantity of cleaning of chickens, you must of course must comply with your local Kosher agency's requirements.
