Hi
I like to buy a large plastic jar of peeled garlic ready for cooking which lasts a few weeks in the fridge.
I always thought only peeled onions overnight in the fridge were problatic but I noticed a different question mentioned garlic as well.
Is it ok to use these garlic cloves?
Does the issue with onions also relate to green onions? Every Friday I soak then wash my bunch of green onions and then store them in the fridge for the week. I always cut off the stems in order to wash them properly.
Would this be a problem?
Lastly not sure if it makes a difference but we are Sephardi.

Shalom,
It's a problem to peel the garlic and leave it overnight. What you can do is leave part of the peel on the garlic, or put salt or oil on it.
Green onions are fine. You can cut off the stems.
