• On Chanukah we light candles on each night of the hoiday, to publicize the miracles that G-d had done at the time of the Maccabees. With the help of G-d the Maccabees defeated the Greeks, even though they were few against many, and a small jug of oil was enough to light the Menorah for eight days.
• On the first day we light one candle and a Shamash (an extra candle), on the second day, two, and another Shamash, and so on until the eighth day, on which we light eight candles and the Shamash..
• All candles except the Shamash are sacred and should not be used (for example to light a candle for them).
•The Shamash should be substantially separate from the rest of the candles, so it will be possible to distinguish between them.
• The placement of the candles is on the right side of the menorah, but we light them in reverse order - from left to right.
• Lecatchila the lighting time is at sunset or at nightfall (depending on the different practices). The candles should burn for at least half an hour.

Before the lighting, we recite:
בָּרוּךְ אַתָּה יְיָ אֱלֹהֵינוּ מֶלֶךְ הָעוֹלָם
אֲשֶׁר קִדְּשָׁנוּ בְּמִצְוֹתָיו וְצִוָּנוּ לְהַדְלִיק נֵר (שֶׁל) חֲנֻכָּה.
בָּרוּךְ אַתָּה יְיָ אֱלֹהֵינוּ מֶלֶךְ הָעוֹלָם
שֶׁעָשָׂה נִסִּים לַאֲבוֹתֵינוּ בַּיָּמִים הָהֵם בַּזְּמַן הַזֶּה.
On the first night we add:
בָּרוּךְ אַתָּה יְיָ אֱלֹהֵינוּ מֶלֶךְ הָעוֹלָם
שֶׁהֶחֱיָנוּ וְקִיְּמָנוּ וְהִגִּיעָנוּ לַזְּמַן הַזֶּה.
After lighting we sing:
הַנֵּרוֹת הַלָּלוּ
שֶׁאָנוּ מַדְלִיקִין, עַל הַנִּסִּים וְעַל הַנִּפְלָאוֹת וְעַל הַתְּשׁוּעוֹת וְעַל הַמִּלְחָמוֹת, שֶׁעָשִׂיתָ לַאֲבוֹתֵינוּ בַּיָּמִים הָהֵם בַּזְּמַן
הַזֶּה, עַל יְדֵי כֹּהֲנֶיךָ הַקְּדוֹשִׁים. וְכָל שְׁמוֹנַת יְמֵי הַחֲנֻכָּה הַנֵּרוֹת הַלָּלוּ קֹדֶשׁ הֵם וְאֵין לָנוּ רְשׁוּת לְהִשְׁתַּמֵּשׁ בָּהֶם, אֶלָּא לִרְאוֹתָם בִּלְבָד, כְּדֵי לְהוֹדוֹת וּלְהַלֵּל לְשִׁמְךָ הַגָּדוֹל עַל נִסֶּיךָ וְעַל נִפְלְאוֹתֶיךָ וְעַל יְשׁוּעָתֶךָ.
מָעוֹז צוּר יְשׁוּעָתִי לְךָ נָאֶה לְשַׁבֵּחַ.
תִּכּוֹן בֵּית תְּפִלָּתִי וְשָׁם תּוֹדָה נְזַבֵּחַ.
לְעֵת תָּכִין מַטְבֵּחַ מִצָּר הַמְנַבֵּחַ.
אָז אֶגְמוֹר בְּשִׁיר מִזְמוֹר חֲנֻכַּת הַמִּזְבֵּחַ.
רָעוֹת שָׂבְעָה נַפְשִׁי בְּיָגוֹן כֹּחִי כִּלָה.
חַיַּי מָרְרוּ בְּקוֹשִׁי בְּשִׁעְבּוּד מַלְכוּת עֶגְלָה.
וּבְיָדוֹ הַגְּדוֹלָה הוֹצִיא אֶת הַסְּגֻלָּה.
חֵיל פַּרְעֹה וְכָל זַרְעוֹ יָרְדוּ כְאֶבֶן בִּמְצוּלָה.
דְּבִיר קָדְשׁוֹ הֱבִיאַנִי וְגַם שָׁם לֹא שָׁקַטְתִּי.
וּבָא נוֹגֵשׂ וְהִגְלַנִי. כִּי זָרִים עָבַדְתִּי.
וְיֵין רַעַל מָסַכְתִּי כִּמְעַט שֶׁעָבַרְתִּי.
קֵץ בָּבֶל, זְרֻבָּבֶל, לְקֵץ שִׁבְעִים נוֹשָׁעְתִּי.
כְּרוֹת קוֹמַת בְּרוֹשׁ, בִּקֵּשׁ אֲגָגִי בֶּן הַמְּדָתָא.
וְנִהְיָתָה לוֹ לְפַח וּלְמוֹקֵשׁ וְגַאֲוָתוֹ נִשְׁבָּתָה.
רֹאשׁ יְמִינִי נִשֵּׂאתָ וְאוֹיֵב שְׁמוֹ מָחִיתָ.
רֹב בָּנָיו וְקִנְיָנָיו עַל הָעֵץ תָּלִיתָ.
יְוָנִים נִקְבְּצוּ עָלַי אֲזַי בִּימֵי חַשְׁמַנִּים.
וּפָרְצוּ חוֹמוֹת מִגְדָּלַי וְטִמְּאוּ כָּל הַשְּׁמָנִים.
וּמִנּוֹתַר קַנְקַנִּים נַעֲשָׂה נֵס לַשּׁוֹשַׁנִּים.
בְּנֵי בִינָה יְמֵי שְׁמוֹנָה קָבְעוּ שִׁיר וּרְנָנִים.
חֲשׂוֹף זְרוֹעַ קָדְשֶׁךָ וְקָרֵב קֵץ הַיְשׁוּעָה.
נְקֹם נִקְמַת דַּם עֲבָדֶיךָ מֵאֻמָּה הָרְשָׁעָה.
כִּי אָרְכָה לָנוּ הַשָּׁעָה וְאֵין קֵץ לִימֵי הָרָעָה.
דְּחֵה אַדְמוֹן בְּצֵל צַלְמוֹן, הָקֵם לָנוּ רוֹעֶה שִׁבְעָה.

Kuzari -Rabbi Ari Shvat Kuzari class 9 - "Seeing is Believing" (parag. 21-30)
These paragraphs elaborate on the theme that seeing and knowing is better than any attempt to prove logically, and begins explaining the difference between Israel and gentiles.
