If the Halachic basis for treating poultry as fleishik is Marit Ayin then what about chicken shnitzel looks like pork, chicken like rabbit and so do veal chops?

We are not required to add prohibitions on top of what our sages established in the Talmud. We may get too far if we rely solely on our imagination.
