Question
I have 2 frying pans that I only use during Passover. Unfortunately I just cant remember which one is dairy and which is meat. Since a year has gone by, can I use either of them for dairy now? Thanks so much.

ב"ה Shalom, This question came to my desk only a short while ago, when we are a long way off from Pesach. Nonetheless, your question has ramifications for the entire year. If for example, someone is short of a pot for meat or for dairy and wants to kasher a pot from meat to dairy or vice versa. For Sephardim, if the utensils have not been used within the previous 24 hours (eino ben yomo), kashering a pot from meat to dairy or vice versa. is permitted from the outset, without reservation. However, Ashkenazim refrain from such practice to prevent using the wrong dish. מג"א או"ח סי' תק"ט \ס"ק י"א, משנ"ב שם ס"ק כ"ה. However, even Ashkenazim permit to do so under certain circumstances, such as if one has no other available utensil or as your case when in any case one is Kashering utensils for Pesach, from Chametz to Pesach at the same time one may switch meat to dairy or vice versa. The fact that the utensil hadn't been used for a year, indeed contributes mitigating circumstances, but with out actually koshering the pans is not enough. (See שו"ת חכם צבי סימן ע"ה, אגרות משה יור"ד ג:כז) Therefore, to redesignate your frying pans ffor meat and dairy you have to kosher them in boiling water as if they had become not Kosher. My suggestion would be to then write with a marker Meat/ Dairy to prevent confusion the following year as we all tend to forget things we haven't seen in a year.
