שימשה ליצור [[יין]] בימי קדם. שרידים של גתות חצובות ב[[אבן גיר]] נמצאו ברחבי [[ארץ ישראל]]. תופעה המעידה על מימדי ייצור ה[[גפן]] בארץ - אחד מ[[שבעת המינים]] ועל השימוש הרחב ביין.<br /> <br /> ==מרכיבי הגת==<br /> הגת מורכבת מבורות וגיתות. ב[[תוספתא]] הוגדרו המרכיבים של המשטח לייצור היין:&quot;כיצד גת אחת לשתי בורות [שתי גיתות לבור אחת] שתי גיתות לשתי בורות...&quot;‏‏&lt;ref&gt;מסכת תרומות ח&#039;,ג&#039;&lt;/ref&gt;. הבור והגת היו חצובים בסלע. לעיתים, הגת היתה מצופה ב[[זפת]] כפי שמובא בתלמוד בבלי :&quot;גת של אבן שזפתה עובד כוכבים&quot; ‏‏&lt;ref&gt;תלמוד ירושלמי, מסכת תרומות פרק ח הלכה ג משנה &lt;/ref&gt; או סודר. החבית, המוכנה לקליטת היין, היתה מוצבת ליד הגת וממלאים אותה מתוך הבור בכלי הנקרא &quot;מחץ&quot; וממנו היין נשפך לחבית. ב[[משנה]] מבואר מה דינו של היין אם נמצא &quot;שרץ&quot; בעת העברתו מהגת לחבית:&quot;הזולף את הבור נמצא שרץ בראשונה, כולן טמאות; באחרונה היא טמאה, וכולן טהורות. אימתיי, בזמן שהוא זולף בכל אחת ואחת. היה זולף במחץ נמצא שרץ באחת מהן, היא טמאה בלבד. אימתיי, בזמן שהוא בודק ולא מכסה, או מכסה ולא בודק. היה בודק ומכסה, ונמצא שרץ בחבית, הכול טמא; בבור, הכול טמא; במחץ, הכול טמא.&quot; ‏‏&lt;ref&gt;‏הקלימסכת טהרות, פרק י&#039;, ז&#039;&lt;/ref&gt;.<br /> <br /> ==מיצוי הענבים==<br /> אך בזה לא הסתיים תהליך ניצול יבול הגפנים. לאחר שדרכו את הענבים בנת על-ידי כפות הרנלים, עדיין נמצא שניתן להפיק מהענבים מיץ נוסף. וכך היו משיטין &quot;עגולים&quot; - כעין ריחים גדולות כדי שימצו את הענבים, הודות לכובד שלהם. אחרי שסחטו את הענבים היו שמים אותם בתוך &quot;עקל&quot; - סל עשוי רשת - שמים עליו משקל כבד וסוחטים את תוכן הסל. לפי המשנה: &quot;כלי בית הבד, והעקל בזמן שהן של עץ מנגבן, והן טהורין בזמן שהן של גמי מיישנן כל שנים עשר חודש, או חולטן בחמין&quot;. ‏‏&lt;ref&gt;שם\ ח&#039;&lt;/ref&gt;
