As part of the college graduation ceremony there is a religious part where different religions offer prayers or reading pertaining to their faith. I was wondering if you have any Tanach verses or prayers you think would be good to read, which pertain to the theme of finishing college.

I would suggest that you give a short explanation and recite Aleinu Leshabech. You could emphasize that this is said every time we finish our prayer as a finishing stand both praising and thanking the Lord for his kindness and our faith in him.
